(One of a two-part Christmas series – cause there was too MUCH to put into just one blog post!)

A quick, curious post as we reflect on this Christmas past.

We had a really lovely Christmas yesterday… long and tiring but filled with…

For me it’s the FOOD that really stands out (and makes my waistline vanish even more).

The kids and I made little Christmas chocolates (re-using the plastic molds from their Advent calendars after cleaning them).  We were delighted with the results…

Our contribution to the Christmas lunch also included seafood – something we really love and perfect for the hot weather of a Down Under Christmas.

Mr Incredible tried out Dad’s new barbecue with some seared scallops and Moreton Bay Bug meat (marinated in olive oil and garlic).

Served on a bed of baby spinach leaves and topped with smoked salmon. Mmmmmm.

I failed to take main meal photos – but there was roast pork, roast chicken and ham accompanied with rice salad, pumpkin and spinach salad and potato salad and an exceptional gravy made by my brother (see Pig, a mention!).  All absolutely scrumptious!

My SIL’s mother made a great plum pudding, Mum made a huge mango trifle topped off with custard, cream and ice-cream.

In an effort to ensure everyone’s cholesterol went through the roof, I also made mud cake muffins with a twist. I added cherries into the mix to ‘Christmas-ify’ it up.  Sprinkled with icing sugar through Christmas stencils.

No wonder I can hardly walk today!

    Your dinner looks yummy! Moreton Bay Bugs look interesting, I’ve never seen them before, I googled them. Are they the size of lobster and do they taste the same? We are of italian descent so Christmas Eve we have the Feast of the Seven Fishes, on Christmas Day it was turkey. For dessert we had homemade cheese cake. We had a good time, the kids made out very well.

    I’m not a seafood person, so I would have preferred your roasted pork, chicken and ham. Your sweets look heavenly!

    We celebrate on Christmas Eve and don’t do a sit-down dinner, so it was pulled pork BBQ and tons of appetizers, snacking foods, and sweets. Quite a success!

    Christmas Eve was turkey, pork, roast vege then trifle and pavlova.
    Christmas Day lunch was turkey, ham and roast vege followed by trifle
    Boxing Day lunch was turkey, chicken, ham and a variety of salads followed trifle, pavlova and icecream cake.
    Boxing Day dinner was Nanas fruit cake and a cup of tea….I have eaten more food in the last three days than I have in the last three months…now a trip out west to work it all off.

    At our house, it is less about the meal and more about sharing the time. I suppose if more people were involved in meal preparation, (many hands make light work…) I’d fancy it up a bit. But we just have ham, mashed potatoes, usually a couple of vegetable side dishes and homemade bread. That’s it really. But it’s a lot of food and a lot of fun. We’ll be celebrating Christmas once again when Dylan and Brittani come in January. That will be a big deal, with lots of family, everyone bringing a dish to pass. I imagine the meal will be a lot more imaginative then.

    Since I live in Texas, USA, we had TexMex. Chicken enchiladas, cheese enchiladas, beef enchiladas, tamales, beans, rice, chalupas, lettuce and tomato salad. Gingerbread for dessert. Yes, the dieting has begun.
